Garnish your food with pure Kashmiri saffron

As the festive season is approaching, one thing which hovers in everybody’s mind is the delicious food that comes with it. One of the main ingredients used in every traditional festival dish is kesar.
Kesar benefits range from treating skin issues, increasing vitality to enhancing the overall well- being of a person. There are many recipes which incorporate kesar. Not only do these saffron recipes add flavour but you can also avail of its various benefits. Given below are such kesar recipes (Pulao, chicken dish, and a dessert) which you can try out this festive season and increase its zeal.


A.   Zafrani Pulao 
Preparation time- 55 minutes
Serving: 6

Ingredients:
          Basmati rice- 1 kg
  • Butter- 2 tbsp.
  • Green cardamom (hareeilaayachee)- 10
  • Cashew- 25 gram
  • Ghee- 1 tbsp.
  • Almonds- 25 gram
  • Raisins- 25 gram
  • Sugar- 100 gram
  • Cream- 50 gram
  • Milk- 500 gram
  • Saffron- a pinch
Method:
  1. Add cream and milk in the saucepan. Keep it on the burner for 5 minutes.
  2. Add sugar in it and stir for 2 minutes.
  3. Add saffron to this and leave it on the stove for 3-4 minutes. (Keep this milk mixture ready).
  4. Add butter in a pan followed by ghee for flavour. Throw in cashew nuts, raisins, and almonds in it. Stir constantly for about 2-3 minutes.
  5. Add semi-cooked basmati rice in this and mix well.
  6. Pour the milk mixture (from step 3) on the rice and cover it.
  7. Cook for 5 minutes and then serve.

B.     Saffron Paneer Dessert
Preparation time- 30 minutes
Serving: 4

Ingredients:
  • Paneer- 250 gm
  • Castor sugar (piseehueecheenee)- 3 tbsp.
  • Almond powder (badam)- 1 tbsp.
  • Crushed cinnamon seeds- 1 tsp
  • Semolina (soojee)- 1 tbsp.
  • Sliced pistachio nuts (pista)- 1 tbsp.
  • Raisins- 1 tbsp.
  • Cream- 3 (1+2) tbsp.
  • Soaked saffron strands- 1 Tsp
  • Ghee- 1 tbsp.
  • Dry fruits- 2 tbsp.
  • Paan leaf- 1
  • Coal- 1 piece
Method:
  1. Beat paneer till it is smooth.
  2. Add sugar, almond powder, spice, and semolina and cook for 5 minutes. Keep in a slow flame.
  3. Stir in the pistachio nuts and bind with 1 tbsp. cream. Place this in a heatproof bowl.
  4. For the topping, spoon on 2 tbsp.cream.
  5. Sprinkle original saffron and dry fruits.
  6. Press the paan leaf and place the cinnamon stick on top with the hot coal.
  7. Pour hot ghee and seal for 5 minutes.
  8. Remove the foil and serve.

A.     Saffron Chicken
Preparation time- 30 minutes
Serving- 4

Ingredients:
  • Broiler chicken (cut into six pieces)- 1 kg
  • Ghee- ½ cup
  • Dry ginger powder (sonth)- 2 Tsp
  • Salt- to taste
  • Cloves (laung)- 10
  • Chilli powder- 1 Tsp
  • Cinnamon (broken into pieces)- 1 stick
  • Fennel seeds (saunf)- 2 tbsp.
  • Water-  ½ cup
  • Saffron- 1 ½ tsp
  • Warm milk- 2 tbsp.
Method:
Soak saffron (you can buy Kesar online) in warm milk and keep it ready.
  1. Wash and wipe the chicken dry
  2. Heat the ghee. Fry the chicken pieces in it till light brown over a high flame.
  3.  Add laung, sonth, chilli powder, saunf, and dalchini. Stir a few times and keep adding water.
  4. Lower the heat and boil the chicken till it is tender.
  5. Add the milk with Kesar (from step 1) to this and cook till all the liquid dries up.
  6. Serve while it is hot.
